Breakfast Egg Bites

 If you need a grab and go breakfast, these are the PERFECT choice! They hold well in the fridge for the week, warm up perfectly and are super filling. I can eat two and be full! They are super versatile, making your options limitless! The recipe is for what I have found to be my family's favorite over time! It's also been the crowd favorite at family and neighborhood potlucks. 

Because nothing sucks more than making a meal and realizing you don't have all the ingredients, here is a shopping list! Take this with you and take some inventory in the kitchen. As you read through this post, there is a substitutions list incase you need to swap ingredients out.

**Some other combos my family has loved is a bacon-cheese-onion-hash brown & a sausage-hash brown-maple! 

PRO TIPS:

  • Hash browns, make sure you cook them up how you like them BEFORE you add them to the egg mix. This will bring all the right flavors to the egg bite. 
  • Maple syrup a little goes a long way!, I recommend adding it in half way through baking by poking a few holes and doing a LIGHT drizzle. There is not really a measurement, you will literally just lightly drizzle the syrup on the egg bite. If you use an extract, add that in with the egg mixture before pouring in the muffin tin. Remember, a little goes a long, long way!
  • Bacon, cook it how you like it and then cut off ALL of the fat before you dice it up. It will help with the over all consistency and texture and you'll still have the great bacon flavor. Leaving in fat can cause the egg bites to break down a bit and fall apart. It will also puddle at the bottom of each egg bite. Gross.
  • Fresh vegetables including onion & garlic, make sure they are sautéed or roasted or steamed before you add them to the egg mix. They won't cook all the way through in the time it takes the eggs to bake, and you don't want an over cooked egg bite.

SUBSTITUTIONS:
  • Heavy whipping cream can be replaced with whole milk, half and half or buttermilk.
  • Cheese can be any shredded cheese you would like. It can also be left out if you decide.
  • Bell Pepper can be swapped for any other vegetable that sounds yummy! Make sure the veggies are finely diced or minced so that they will cook evenly.
  • Italian sausage can be swapped for breakfast pork sausage, any flavored sausage, bacon, or ham.
  • Yellow onion can be swapped with a white or purple onion.
  • Garlic cloves can be substituted with garlic powder. NOT garlic salt Just use 1.5 tsp.

We love making these, as part of a DIY breakfast buffet. I will cut up a few different fruits and make pancakes or a yummy bread or muffin. These are a tasty and healthy on the go breakfast option. I have even had them for lunch and dinner and wasn't even sad about it 😏.
